🥬 Breakfast Smoothie 🥬
1/2 collard greens
1/2 broccoli sprouts
2 cups coconut water
1/4 cup frozen mango
2 tbsp hemp seeds
2 tbsp ground flaxseeds
2 cups spinach
1 ripe banana
Thumb-size ginger

🥬 Lemon Tahini Dressing 🥬
1/4 cup tahini
2 tbsp fresh lemon juice
1 tbsp apple cider vinegar
2 cloves garlic, minced
1 tsp pure maple syrup
salt and pepper to taste
1/4 cup water to thin

Spring Time Soup
INGREDIENTS
2 cups kale
2 tbsp avocado oil or grass-fed butter
1 medium yellow onion, finely chopped
3 cloves of garlic, minced
2 1/2 tablespoons fresh thyme leaves
1 bay leaf
1 medium green zucchini, sliced into half-moons about 1/2 inch thick
1 medium yellow zucchini, sliced into half-moons about 1/2 inch thick
4 cups vegetable stock
Salt and freshly ground black pepper
2 cups cooked chickpeas
1 tablespoon fresh lemon juice
2 teaspoons grated lemon zest
Pinch of crushed red pepper flakes

ASSEMBLE
Separate the stems from the kale leaves. In a large pot over medium heat, melt the oil. Add the onion and cook, stirring occasionally, for about 5 minutes. Add garlic, thyme, and bay leaf. Cook for about 1 minute longer.

Add the zucchini, stock, and salt and pepper. Bring the liquid to a boil again. Reduce the heat to medium-low and cook until the zucchini is tender about 8 minutes. Add the chickpeas and kale. Continue to cook until the kale wilts down a bit. Season with lemon juice, lemon zest, red pepper flakes, and additional salt and pepper.
