This is a simple roast chicken recipe that I make very often. It is a great meal prep because you can use different parts of the chicken in different recipes the day after. There is close to no prep required. And it comes out perfect every time. We eat the thighs when. they are freshly cooked and warm because that is our favourite part of the chicken. The breasts are cooked very tender in this recipe since the chicken is skin on and this is almost the best way to cook them. They go well in pastas, wraps and sandwiches. Wings are wings. Dip them in a hot sauce and eat them. So these roast chicken can be stretched for days. It doesn’t have onions or tomatoes and will stay in a refrigerator for 5 days.

Oven time: 180 C or 350 F for 1 hr for under 1 kg chicken. Longer for larger chickens.
