Ingredients to make Aratikaya Chips:
2 Aratikaya / raw green plantains
oil to deep frying
salt to taste
Chilli powder to taste or 1-2 dry red chillis (optional)
Aratikaya Chips Preparation Method:
Take two or three big and long unripe bananas. Wash them thoroughly and peel the skin lightly. Now take a slicer or a knife and cut the banana into slices. Now take a deep vessel and add some oil and let it heat for a few minutes. To check if the oil is heated drop a slice and if the slice floats to the surface with bubbles indicates the oil is heated for deep fry.
Take the banana slices and drop them one by one in the oil. Take a ladle and toss the pieces to fry on both sides. Once the slices are fried well, remove them from the oil and place them on a paper towel to absorb the excess oil from the slices.
Add salt and chilli powder to these chips and store them well in an air tight container. You can take Aratikaya Chips with sambar or rasam in rice or take it as a snack also.
