It is good for the treatment of skin inflammation, mouth ulcers, indigestion, smallpox, skin disorders, blood sugar levels and it is good for eye care. It includes vitamins and minerals. Mostly coriander is used for garnishing dishes.
It gives good flavour to the dishes and it is also used for weight loss. It helps to raise healthy level cholesterol. There are some of the essential oils found in coriander such as borneol and linalool used to treat diarrhea. It helps for the proper functioning of digestive system.
Ingredients to make Kothimira Rice:
2 cups rice, washed and soaked in water for half an hour and drained
Big bunch of coriander leaves, washed and chopped
4 green chillis
4 tbsp grated fresh coconut
Red chillies fry
1″ ginger piece
6 garlic flakes
whole spices (6 cloves, 3 green cardamoms, 1″ pieces cinnamon-2, bay leaf)
Salt as required
Kothimira Rice Preparation Method:
1) Kothimira rice is good for health and it is easy to prepare. Take a bowl of rice and cook the rice. Take bunch of coriander and clean it. Chop the bunch into small pieces. Now take a pan add oil and heat it for a second, add cumin seeds, green chilies, ginger piece, chopped coriander leaves add grated coconut. Keep it in a medium flame and cover it with the lid.
2) Leave it for few minutes until the rawness smell goes away. After it is fried keep it in a plate to get cool for some time. Now grind it and take a khadai add oil, whole spices and grinded coriander paste, salt to taste and pinch of turmeric powder. Keep it in simmer for few minutes take the rice and add to the paste. Mix the rice well with the coriander paste.
3) Now take some cumin seeds, mustard seeds and red chillies fry it in a pan and add them to the kothimira annam. Garnish with fried curry leaves. Serve the rice hot with raita.
