Ingredients to make Vankaya Kothimeera Fry:
Brinjal – ½ kg
Coriander seeds – ¼ th cup
Dry copra powder (Coconut Powder) – ½ cup
Cumin seeds – 1 spoon
Red chillies – 10 nos
Fresh Curry leaves – 10
Popu Dinusulu – 1 spn
Oil, salt – as required
Vankaya Kothimeera Fry Preparation Method:
1) Wash and cut the brinjal and put them in Salt water for 5 minutes.
2) Take together the chillies, cumin, coriander seeds, beat them like powder.
3) Heat oil in a pan, fry the Popu Dinusulu (fry mix), curry leaves, brinjal pieces, boil well and add already prepared powder and mix tem.
4) Add some salt and keep on stirring so that it donot stick. Switch off when the brinjal cooks well.
If you have any skin allergy, add a spoon of lemon juice.
Popu Dinusulu – Fry mix : A mixed lentils of mustard seeds, split urad dal, split gram dal, and cumin.
