Ingredients to make Chandrakaantalu:
1 cup pesara pappu (split yellow moong dal)
1 1/2 cup sugar
1/2 cup fresh grated coconut
1/4 cup chopped cashewnuts
1 tsp cardamom powder
pinch of salt (optional)
oil for deep frying
Chandra Kaantalu Sweet Preparation Method:
Soak moong dal in a bowl for an hour and grate the coconut into powder.Take cashew nuts and chop into small pieces.
Take cardamom powder and keep it aside.
Now you can drain the water and make it into a fine paste. Take the grated coconut and crushed cashew nuts and mix well with the dal.
Take a heavy bottom vessel and add water, sugar and dal mixture. Keep it on a medium flame till the sugar melts.
Stir well until the syrup should form a thick liquid. You will find bubbles while it is cooking. Add little salt to it. Mix well and when the syrup get absorbed into the dal then switch off the flame
Take the mixture on a wet cloth and spread the mixture evenly. Cut it into a desired shape and now keep a heavy bottomed vessel and add oil for deep fry.
Separate pieces from cloth and dip in the oil. Let it fry for few minutes till it changes to golden brown colour.
Serve Chandra Kaantalu warm or cool. Store it in a air tight container.
