Andhra Ugadi pachadi is a delicacy reflecting different flavors of life.
In Andhra pradesh, there is a tradition of eating different special for different festivals. Most of them are sweets and hot. But Ugadi is a special festival as it is celebrated as New Year according to telugu calendar. It is special chutney called ugadi pachadi made during the ugadi festival only. It contains six different tastes sweet, sour, pungent, spice and bitter.
It signifies that life is a mixture of happiness, sadness, fear, anger. It denotes the birth of spring season. Most of the people start their ventures on ugadi. They believe that it gives more money and prosperity.
Ingredients to make Ugadi Pachadi:
1 cup of raw fresh mango cleaned
1 tbsp neem tree flowers and petals
1 cup grated jaggery
1 tbsp fresh finely chopped coconut pieces (optional)
3 to 4 tbsp tamarind paste
2 green chillis (to your choice)
Ugadi pachadi Preparation Method:
Take all the ingredients like crushed jaggery, neem flower petals, raw mango pieces, tamarind water, coconut pieces, and green chillis.
Now take crushed jaggery in a bowl add some water and heat it till it melts and blends into the mixture. After it is ready leave it a side till it gets cool.
Take a low bottomed bowl and add neem flower petals, raw mango pieces, coconut pieces, tamarind water and slice green chillis.
Now take the melted jaggery and add to the ingredients. Mix it well. Now the traditional ugadi pachadi is ready.
You can also add small sugarcane pieces, small pieces of ripe banana, putanaala pappu roasted along the above ingredients.
