Mamidikaya Kura Recipe | How to Make Mamidikaya Pachadi

Ingredients to make Mamidikaya Pachadi:

1 raw mango

1 tsp mustard seeds

½ tsp methi (fenugreek seeds)

½ tsp cumin seeds

10-12 crushed garlic flakes

2 big onions finely chopped

2 tomatoes finely chopped

¼ tsp turmeric pwd

1 tsp red chilli pwd

3 cups of water

½ cup grated jaggery

2 tbsp oil

salt to taste

Mamidikaya Pachadi Preparation Method:

Take pan heat oil. Add mustard seeds, cumin seeds and fenugreek seeds and let them splutter for a second and add the crushed garlic flakes and fry for a second.

Add the chopped onions and fry till it changes to golden brown colour.

Now add salt to taste and turmeric powder, red chilli powder. Mix it well and then add chopped tomatoes and cover with the lid till the tomato pieces get softy.

Keep it on a medium flame. When the tomatoes turn to softy you can add mango pieces to it.

Add water to it and cover with the lid for few minutes and let it cooked on a medium flame.

Add the grated jaggery and cook for few minute, till the water get evaporates.

Serve hot with rice or roti.

Note:
You can store it in fridge for few days and while eating you can re-heat it. If you feel it is necessary.
