How to Make Vankaya Kothimeera Vepudu | Vankaya Kothimira Curry

Ingredients to make Vankaya Kothimeera Vepudu:

1/4 kg purple brinjals, slice them thin lengthwise

Big pinch turmeric powder

1 tbsp oil

salt to taste

1/2 tsp mustard seeds

3/4 tsp cumin seeds

big pinch asafoetida

12-15 curry leaves

Make a coarse paste:

1 small bunch coriander leaves

3-4 green chillis

1″ ginger

Vankaya Kothimeera Vepudu Peroration Method:

Take pan heat oil in it and add cumin seeds, mustard seeds and let them splutter for a second then add asafoetida.

Now take the sliced brinjals and add it. Cover with the lid for few minutes till the brinjals changes its colour.

Remove the lid and add turmeric powder, salt and stir it well. Now take a half bunch off coriander leaves, ginger and green chillies.

Grind them into a fine paste .Remove the lid and add this paste to brinjal. Mix well with the brinjals and adjust the salt.

Leave it for few minutes and then remove from the flame. Finally add coriander leaves for garnishing.

Serve with hot rice.
