How to Make Thotakura Fry | Thotakura Vepudu

Ingredients to make Thotakura Fry:

6 big bunches fresh thotakura (amaranth leaves)

1 big onion, finely chopped

1/2 tsp mustard seeds

1/2 tsp cumin seeds

4 dry red chillis de-seeded

5-6 garlic flakes, crushed

1 sprig curry leaves

2 green chilies, slit length wise

big pinch turmeric pwd

salt to taste

1/2 tbsp oil

Thotakura Fry Preparation Method:

Take the amaranth leaves clean them. Slightly chop along with the stalks.

Now take bottom vessel add water and amaranth leaves boil it in medium flame till the water get absorbed.

Heat oil in a pan and add mustard seeds, cumin seeds, garlic flakes and red chillies fry it till the chillies and garlic flakes changes its colour.

Add green chillies and curry leaves. Leave it for few minutes.
Add sliced onions and fry them .Now add salt and turmeric powder.

Leave it for few minutes and add the boiled amaranth leaves mix well and leave it for few minutes till it get done completely. Serve hot with rice or roti.
