How to Make Gutti Beerakaaya Kura

Ingredients to make Gutti Beerakaaya:

1/2 kg beerakaaya (ridge gourds)

2 medium onions, sliced

4-5 dry red chillis, de-seeded

1 tbsp ginger-garlic paste

1 tbsp coriander seeds

1 tsp cumin seeds

3 tbsp nuvvulu (sesame seeds)

1 tbsp grated jaggery (optional)

salt to taste

small lemon sized tamarind ball

1 tbsp oil

Gutti Beerakaaya Preparation Method:

Heat oil in a pan and add cumin seeds, coriander seed let it splutter for a second and then add red chillies, sesame seeds. Fry it on a medium flame. Switch off the flame and let it get cool. Now take the cooled spices and grind it into a fine paste along with ginger, garlic , onions and little jaggery , tamarind and salt.

Take the ridge gourd clean it and cut it in a desired shape to stuff the grinded spices. Stuff the spices paste at the middle of the ridge gourd. Heat oil in a pan and add curry leaves fry for a second and the stuffed ridge gourd in the pan and let it cook for some time on medium flame. Cover with the lid.

Now remove the lid after few minutes stir it will the ladle to get fry all the sides. Cover with the lid till the ridge gourd gets soft texture. Now switch off the flame and serve Gutti Beerakaaya hot with steamed rice.
