Gutti Dondakaya Masala Kura | How to Make Gutti Dondakaya Masala Curry
Ingredients to make Gutti Dondakaya Masala:
1/2 kg Dondakayalu (chop ends, make a slit length wise to stuff and boil in salted water till half cooked and strain the water)
2 medium onions, sliced
3 green chillis
1 tsp ginger-garlic paste
1 tbsp coriander seeds
2 tbsp grated coconut
1 1/2 tbsp nuvvulu (sesame seeds )
1 1/2 tbsp grated jaggery (adjust to your choice)
1″ cinnamon stick
small lemon sized tamarind ball
salt to taste
few curry leaves
1 dry red chilli
2-3 tbsp oil
Gutti Dondakaya Masala Preparation Method:
Take some fresh dondakayalu clean them and remove the top and end edges and cut them like flower bud for stuffing masala in it. You need to half boil the dondakayalu in salt water and drain it. Chop onions and keep it aside. Take pan heat oil in it and add coriander leaves, cloves, sesame seeds and cinnamon fry it well. Remove from the flame and keep it aside to get cool.
Add oil in the same pan and add chopped onions, green chilies. Fry it till it changes its colour to transparent colour. Add the grated coconut powder and switch off the flame. Let it cool for few minutes and take all the fried ingredients and grind it and add fried onions, chillies make it into a fine paste. Add jaggery, tamarind and salt grind well.
Take the stuff and put the stuff at the middle of the dondakayalu. Heat oil in a pan and add curry leaves, red chilies and fry it for few minutes. Now add the stuffed dondakayalu and let them fry for some time till the dondakayalu get cooked into soft texture. Cook it on a medium flame. Cover with the lid for few minutes. Now remove the lid and mix it again. Switch off the flame and serve hot gutti dondakaya masala with rice.
