Ingredients to make vankaya batani Koora:
1/2 kg white brinjals, washed, cubed and soaked in water
1 cup green peas
pinch of turmeric
salt to taste
1 tsp mustard seeds
1 tsp cumin seeds
1 1/2 tbsp finely grated ginger
6-8 garlic cloves, slightly crushed
2-3 dry red chillis, tear
12-15 curry leaves
3 medium onions, grated
3-4 green chillis, crushed
1 1/2 tbsp oil
Vankaya Batani Curry Preparation Method:
Take white brinjals and cut them into pieces and take the green peas and add to water, turmeric powder and salt for boiling.
Now remove the water from brinjals and peas. Keep it aside. Take pan heat oil in it and add mustard seeds to it, fry them till the seeds get splutter.
Add some cumin seeds, curry leaves and dry red chilies, garlic and ginger, fry for few minutes in a medium flame.
Add some green chilies, onions fry it till the onions get transparent colour. Add the boiled brinjals and green peas to the mixture and cook it on medium flame for few seconds and then remove the lid.
Add coriander leaves for garnishing. Mix well and switch off the flame.
Serve vankaya batani curry hot with steamed rice or chappati.
