Ingredients to make Chikkudukaya Tomato Curry:
1/2 kg Chikkudukaya (sem, broadbeans)
2 medium onions, finely chopped
1 slit green chilli
2 big tomatoes, finely chopped
pinch of haldi, turmeric
1 tsp red chilli powder (adjust to your choice)
1 tbsp grated jaggery (adjust to your choice)
pinch of garam masala powder (optional)
1 1/2 tbsp grated coconut (optional)
Salt to taste
Fresh coriander leaves for garnish
1/2 tsp mustard seeds
1/2 tsp cumin seeds
2 dry red chillis
3-4 crushed garlic cloves (optional)
few curry leaves
1 tbsp oil
Chikkudukaya Tomato Curry Preparation Method:
Take some chikkudukaya (broad beans) tear it into two pieces and clean them in fresh water. Heat oil in a pan add cumin seeds, garlic flakes, mustard seeds and fry them on a medium flame. Add red chilies and fry for few minutes.
Take some chopped onions and add to the mixture fry well till the onions changes its colour. Keep it on a medium flame.
Now add the chopped tomatoes fry them till it gets soft texture and then add salt to it. Take the chopped broad beans and cover with the lid till the greenness of beans changes to transparent colour.
Remove the lid and add red chili powder, masala powder and some water mix it well and heat it on a medium flame for few minutes and switch off the flame. Finally add coriander leaves for garnishing and serve chikkudukaya tomato curry with steam rice or roti.
