Ingredients for Khasta Kachori:

2 Cups all purpose flour

½ spoon baking soda

5 tbsp oil

Salt as required

For Stuffing:

½ cup black grams (kaale dal)

1 tsp ginger grate

2 green chilies

5 cashew nuts

10 kismiss

3 tbsp ghee

½ tsp cumin powder

1 tsp coriander powder

½ tsp chili powder

¼ tsp fennel seeds powder

½ tsp sugar

1 tbsp lemon juice

¼ tsp asafoetida powder

Oil as required for fry

Salt as required

Khasta Kachori-Chaat RecipeKhasta Kachori  Preparation Method:

1) Combine salt, baking soda and oil in the all purpose flour, mix well. Add enough water in it and bring it like soft dough, set it aside.

2) Soak black grams in enough water. After 30 minutes drain the water completely, add in a blender and grind coarsely, keep it aside.

3) Heat ghee in a frying pan, fry all one by one the ginger grate, green chilies chip, asafetida powder, coriander, cumin, fennel & chili powder.

4) Then put in the black gram coarse mix in the frying pan and fry till the mix comes like dry coarsely powder.

5) Lastly add the sugar, salt and lemon juice in the fry, stir well twice or thrice and switch off.

6) When the heat of the fry is reduced, split the mix into 16 parts, and press them all like small puris.

7) Heat oil and fry them one by one on simmer flame.

8) Khasta Kachouri is ready.
