Ingredients to make Khichdi :
1 1/2 cups old basmati rice (You can use any rice variety)
1/2 cup pesara pappu (split yellow moong dal)
1 tbsp ghee
1 tsp cumin seeds
10-12 fresh curry leaves
1/4 tsp whole black pepper (optional)
salt to taste
3 ½ cups of water
Khichdi Preparation Method:
Take basmati rice and dal in a bowl with water. Soak it for 3o minutes.
Mean while take a cooker heat oil or ghee in it. Add cumin seeds, curry leaves and let them splutter for a minute. Add black pepper corn and fry for a second.
Take the combined dal and rice, drain the water from it. Add drained dal and rice to the spices mix well and add salt and water to it.
Cover with the lid for few minutes till the rice and dal get boiled. Keep it in a medium flame.
Take a fry pan and heat oil to it. Add cashew nuts fry them till it changes to golden brown colour. Take it into a bowl and keep it aside.
Now remove the lid and check whether the water observed and dal and rice get cooked softly.
Garnish with fried cashew nuts. Serve hot with tomato chutney or avaki pickle.
Note: You can also roast moong dal before soaking in water with rice. If you want the rice and dal to get gooey texture you can add extra glass of water.
Variation: You can add vegetables like Potato and Green peas to make vegetable Khichdi.
